Cathedral Ledge Maple Cask Finished Organic Bourbon

We lent two of our recently emptied bourbon barrels to a local maple syrup producer, so that they could age their syrup in them. When the barrels were returned sticky and wet, we refilled them with bourbon for additional aging. The result is a robust bourbon, with broad shoulders and a hint of maple.
