Our annual birthday release grows up a little more each year. Every November we bottle at cask strength a third of the rum in our used Armagnac cask. We then top up that cask up from successive layers of used bourbon, new oak, and PX-sherry-seasoned barrels. New rum invigorates the blend, while the mature old juice steadies the course. Aging isn’t so bad, now, is it?
